Katlama- The Delicious Festive food of Lahore

A local Lahori festive specialty, Katlama (pori base prepared with May’da i.e white flour) topped with Basin (gram flour) mixed with herbs and spices, and fried in oil in a flat iron pan of giant size (absolutely not for calorie conscious folks!!). No matter where you buy it, Katlama always tastes the same. It is also known as Desi pizza.

The Largest Food Street of Asia in Karachi

Minister for Ports and Shipping Senator Babar Khan Ghauri during his review visit to the site of the ‘Port Grand Food Court’ under Napier Mole Bridge has announced Asia’s largest and most modern food street to be built at a cost of Rs1 billion and spread over nine acres. It would be inaugurated by the end of November this year in Karachi.

samosaIt cost just three rupees. Squashed between a doughy naan and seasoned with a splash of green chutney of dubious provenance, the ‘samosa-naan’ was sold for three bucks a pop at my college. With the triple dose of carbs – potatoes, pastry and naan – it was obviously filling. Less obvious is how satisfying the concoction was: the naan’s rubbery dough, the crushed but still crisp samosa shell, the spicy potatoes with little bursts of flavor in the form of anardana (dried pomegranate seeds) and dhaniya (coriander) seeds, the tart chutney. Is talk of textural complexity too pretentious for what is essentially a meal of necessity? I say no.

Khajla PheeniYou’re up even before the cock crows and the faint light of dawn is still very distant. But in spite of the ungodly hour, the entire household is up and about, and the house is vibrating with the sounds of clattering dishes and the wafting aroma of fried eggs, oily parathas, delicious Khajla, pheeni and steaming tea. That’s sehri for you in Ramadan. During the Holy month of Ramadan confectioners were busy preparing oriental delicacies such as “Khajla” and “Pheni”, small pancakes and vermicelli soaked in milk with sugar.

Magical mangoes

It is one of the most popular and best-loved fruits worldwide. Because of its excellent flavor, attractive fragrance, beautiful shades of color, delicious taste and healthful value, mango is now recognized as one of the best fruit in the world market. Mango has had a prominent position among the commercial fruits of Pakistan. It enjoys second position after citrus in Pakistan. The Pakistani Mango is well known for its taste and quality abroad. More than 54,000 tons of mangos are exported to neighboring and European countries. Mangoes are mainly eaten fresh, but are also used in preparing squash, jam, and other preserves and sometimes canned. Young mangoes are used in making mango chutneys and pickles “achar”.

Lays Chips, Junaid Jamshed & Ulema; A never ending controversy

Lays has been facing the prevalent and incensed crisis ever struck a food product in Pakistan. The issue of using E631 flavor enhancer and pig fat has really declined the sales and image of Lays. It has become a favorite brand in no time when introduced in Pakistan. The recent addition to the story was Junaid Jamshed endorsing the brand for the first time. He urges people to eat lays as he found that they are HALAL.
